Omelette du fromage
Because my husband and son loves to eat cheese, adding cheese to the good old scrambled egg served during breakfast can make a difference between them having breakfast and skipping the first meal of the day. So how do I cook my Filipino version of Omelette du fromage? Here is how you can do it:
1. Scramble the eggs (in my case, I use four eggs for the three of us). Adding salt makes the egg too salty so I prefer NOT to add salt at all.
2. Slice just enough cheese cubes. Some people grate the cheese but using grated cheese sometimes dissolve the taste of the cheese. Cubed slices also make the omelet much tastier.
3. Add the cheese to the egg and cook in a pan.
Optional:
Adding other ingredients makes the omelette du fromage much tastier and even healthier. You can add corned beef, pepper, carrots, onion leeks, potatoes and bacons.
The challenge I always meet when cooking omelette is flipping over the egg particularly if it is heavy with ingredients like potatoes and corned beef. Just be careful when flipping over the omelette or you may be serving a really scrambled omelette du fromage :-)
